Blueberry Biscuits

This blueberry biscuit recipe is one to impress your family on a Saturday morning. You could even serve it as dessert for Sunday supper. It will definitely bring everyone around the table. Have fun sharing.
Sweet Blueberry Biscuits
2 cups ap flour (I like White Lily)
1 tbsp baking powder
1 ½ tsp salt
3 tbsp sugar
1 stick of cold butter
¾ cup of buttermilk
1 cup frozen blueberries (1 reserve ¼ cup for the icing but you can put them all in if you like)
I like to use a food processor. Add the first five ingredients and pulse until butter is bead-like with flour. Then add buttermilk and pulse until dough forms. Dump on a floured surface and work your blueberries into the dough. Roll out and use a biscuit cutter to cut and place in a greased round pan or iron skillet. Bake 500 degrees for 12-15 minutes. Remove and drizzle with icing while hot.
Icing
1 cup powdered sugar
3 tbsp milk
1 tsp vanilla
¼ cup blueberries
Whisk the first three ingredients together then fold in the blueberries. Drizzle and cover the hot biscuits and enjoy!
