Yummy Sourdough Cinnamon Rolls

These are a yummy treat to serve guests for Sunday brunch. Homemade sourdough cinnamon rolls skip all the processed junk you find in canned versions. The natural fermentation of sourdough adds a deep, complex tang that balances the sweetness. It is so satisfying watching your dough rise and the aroma that fills your home while baking something you made from scratch. I hope you enjoy these as much as my family and friends do.
Cinnamon Rolls
150 grams starter-freshly fed and active
325 grams of warm water
25 grams of honey
1 Tbsp avocado oil
500 grams of flour
1/2 teaspoon salt
On a food scale, add starter, water, honey, oil and salt. Whisk together until everything is blended with a dough whisk. The add your flour and continue to mix with your dough whisk. Then using wet hands dump the dough out and stretch and fold. Then pull the dough towards you creating a round ball. Grease your bowl and place the ball of dough back in the bowl. Cover with saran wrap or a towel and leave it to set for the night. By morning your dough will have doubled in size. Dump your dough on the counter and stretch it out to make a 12 x 15 rectangle.
Cinnamon Sugar Filling
1/2 cup brown sugar
2 Tablespoons cinnamon
1/3 cup melted butter
Spread your butter on top of you rectangle and top with the cinnamon sugar mixture. Then work from side to side rolling your dough towards you until it releases from the counter. Measure and cut 12 even pieces. I like to use dental floss to cut through the dough.
Spray a 9x13 pan and place your rolls face up in the pan. Cover and let rise until double in size. Note: I set mine in the oven with the light on and they are ready in couple hours to bake.
Bake at 400 degrees for 15-20 minutes or until thermomotor reads 200 degrees.
Cream Cheese Icing
1 block cream cheese
1 cup of butter
6 cups of powdered sugar
2 tsp vanilla
1/4 cup heavy whipping cream
Cream butter and cream cheese together. Add vanilla and give it another whirl. The add powdered sugar and heavy cream. I cover my mixer with a towel and cream all ingredients together. Then spread the desired amount on your hot cinnamon rolls.
This recipe makes more than you need so I put half the icing in the freezer until the next time we are craving something sweet.
