High Protein Chicken Caesar Salad

Sneaking protein in your diet is always a good thing. Most of us do not consume enough protein daily. So, when I can sneak things in a recipe like Greek yogurt and chickpea pasta it’s a win win! Chickpea pasta is also gluten-free, making pasta feel less guilty. So grab a jar and a big dumping bowl and enjoy!

Dressing
▢ 2 Tbsp Greek Yogurt
▢ 1 Tbsp Olive Oil
▢ 1 Tbsp Grated Parmesan
▢ 1 Tbsp Lemon Juice
▢ 1/2 Tsp Onion Powder
▢ 1/2 Tsp Garlic Powder
▢ 1 Tsp Honey (Optional)
Salad(4 Jars)
▢ 1/2 Diced Avocado
▢ 3/4 Cup Diced Chicken Breast
▢ 1 Cup Chickpea Pasta
▢ 1 1/2 Cups Shredded Romaine Lettuce
▢ 1 Tbsp Croutons (Optional)
▢ Extra Parmesan Cheese to top (Optional)
Instructions
Put ingredients for the dressing in all four jars. Stir the ingredients together in the bottom of the jar. Then Begin filling in the following order; 1. Avocado 2. Chickpea Pasta 3. Chicken Breast 4. Romaine Lettuce 5. Croutons 6. Additional cheese to taste. When ready to eat just dump your jar into a bowl and enjoy!
Notes
Jars are great for transporting and meal prepping but not so great to eat out of. I like having a large "dump" bowl so that I have plenty of room to stir all my ingredients together.
