Fall Harvest Salad

Don’t you love the flavors of fall? Apples and sweet potatoes are my favorite. Try roasting your sweet potatoes with a little olive oil and cinnamon. I promise you won’t be disappointed. Feel free to add your favorite nuts, change the cheese, add pomegranate seeds or oranges. So many options! This is my go to fall salad with so many options to tweak it your way. Eating healthy can taste so good!

FALL HARVEST SALAD DRESSING:
1/4 cup olive oil
2 tbsp apple cider vinegar
1 tbsp maple syrup
1 tbsp of orange zest
juice of 1/2 an orange
1 tbsp fresh chives
FALL HARVEST SALAD:
6 oz lettuce your choice
2 cups chopped Granny Smith apple
1 cup roasted sweet potatoes
1/4 cup thinly sliced red onion
1/2 cup diced avocado
1 cup farro
1/2 cup fresh crumbled feta
Top with pistachios
Whisk your ingredients for your dressing and set aside. Assemble your salad and drizzle the dressing over top and toss. Enjoy!
