Vegetarian Bean Salad

This is for all the bean lovers out there, or the lettuce haters, you pick. Loaded with protein and fiber, beans are a must in your diet. They are the one thing that everyone who lives in the Blue Zones eats for longevity. This is the perfect dish to make and take to a party or a picnic. This dish has a lower glycemic index and is great for diabetics and those of us who want to feel satiated longer. Say so long to the snacks, you won’t even miss them! 


VEGETARIAN BEAN SALAD DRESSING:

1/4 cup olive oil

2 tbsp lemon juice

2 tbsp red wine vinegar

1 clove of garlic

A squeeze of honey 

2 tbsp parsley

1 tbsp oregano

Salt and pepper to taste


VEGETARIAN BEAN SALAD:

1 can cannellini beans

1 can chickpeas

1 can light red kidney beans

2 cups blanched asparagus

1 cup diced pepperoncini

1/2 cup roasted red peppers diced

1/4 cup red onion diced

1 cup cherry tomatoes 


Whisk all your dressing ingredients together and set aside. Drain and rinse your beans and add the remaining ingredients. Pour dressing over top and mix everything together. This is great by itself or you could add pasta and chicken for a larger meal all in one. Enjoy!
